I love cooking. I always have. Some of my family members are surprised by the foods that I prepare. You see it’s just me. Well, me and my dog, Angel and my cat, Mr. Trixie. They are often shocked that I don’t just eat fast food or frozen meals. The family not the “kids”. lol
Here are my babies!
I don’t think that my food is all that extravagant but I suppose some of the meals are a little more than the typical single person might cook such as this Thai Coconut Curry Shrimp. I was quite proud of this dish.
However, I’ll be the first to tell you though that a home cook I am; a chef I am not.
Recently my cooking has changed quite a bit. I’ve gone through my phases of trying to eat healthier. Hence the whole “Trial and Error” thing. My weight has fluctuated all of my life. Not by a little bit either. I tend to gain and then lose 30-40 lbs at a time.
A little over 2 months ago I started my latest endeavor and am eating a low calorie diet. 2 months! This is the longest I have gone through one of these “phases” in a long time. I’m hoping that this time it won’t be just a phase and will instead be a life style change. Only time will tell.
In the meantime I am enjoying the fact that I have lost just shy of 20 pounds and 3 inches around my waist. I am almost half way to my goal weight. Yay!
As I come across new low calorie meals that I think others will enjoy I will share them with you. I admit though, most of my meals are going to be on the healthy side but they won’t all be. Sometimes a girl needs her cake!
I made my first Red Velvet Cake last Easter. I think it turned out alright. What do you think?

If you aren’t in to the low calorie thing that’s ok too. I will be sharing more than just good-for-you food. Some of my favorites include Potato Soup with Italian Sausage, Beef Enchiladas and Chicken Chili. Yumm!
Life isn’t all about food either. I’m pretty much an open book. Food is on my mind constantly but it does sit on the back burner every now and then so that other things can come forward. Whatever those “things” are you can bet I will probably be sharing them on here. It’s what I do!
